How can I change the overall pitch of the keyboard to match other instruments or previously recorded music? Not just transposing to another key.

i have no idea how the master tune of the keyboard is handled on roland gear, but it can't be much different then korg/yamaha.

Try looking for some general keyboard options (Master/System/Global... something like that) - there should be a master tune option that is most likely tuned to 440Hz
