What's The Best Way To Get Sounds Using A Midi Controller?

To start with I'm a drummer/guitarist. I have a Yamaha KX8 and want to use it in my home studio for piano, organ, synthesizer, etc. I know I could hook it up to my computer and use the VSTs/VSTIs for sounds for recording but that means it's always gotta be plugged into my computer (which may be the way to go) or I guess I could buy sound modules. What's a good way that's flexible and not super expensive to use my controller and have access to many types of sounds (piano, funk, trance, etc.)? I may even have someone sit in and jam with me using it as well.... if I can figure this out. Thanks for any advice I can get.
