Splits on Vox Continental 73 BK

Like it says, can I split the keyboard between different sounds using a split point? I know you can layer them.

Yes. But you can't shift the pitches of the upper and lower sounds. So for example, if you were to put a string sound on the left, that could work for the sound of something like low cellos, but you can't transpose it up if you wanted your LH sound to be high violins. So the split function is really designed for things like playing a LH bass sound.
