I haven't heard of keys yellowing on a digital piano. Which keyboard is this happening to?

The yellowing is the bromine in the plastic reacting with the atmosphere.
There is no way to to return them to their original whiteness.
Learn to live with it.
Temporary fix that involves complete disassembly of the keyboard.
