I have a Yamaha MOX6f keyboard and have noticed that some sounds allow you to sustain with pedal but others do not. Am I missing something?

It's because sustaining some instruments makes no sense.

For instance a snare or an accordion sound or a pizzicato violin.

I get what you're saying but the sounds are orchestral strings, organ etc. But maybe these sounds as you say are not meant to be sustained.

Perhaps the programmer just never turned the sustain pedal on on those patches. Why don't you just adjust the patch and add the sustain pedal function by turning it on?

The problem with using sustain on an organ patch or swelling strings is that the notes keep piling up as you play.

It really is not all that attractive a sound. It rapidly grows to a roar that could pop a woofer quite easily.
