I have a keyboard plugged into a midi input on my computer and was just curious if there could be a program that "listens" to what you play and interprets it into sheet music?

If anyone has any ideas or can point me in the right direction that would b great.

I'm looking for something free, but aren't we all? I'll look at anything anyone can come up with.

If you run linux on your computer, I can recommend Rosegarden with jack. It is an opensource midi sequencer and you can export the midi files to lilypond. Lilypond is quite similar to Latex and creates good outputs.

Agreed on Linux Rosegarden with Jack and Lilypond are your best bet.

If you're married to the Windows platform, however, there's Anvil Studio, which, while free, charges for plugins including one that scores your music into notation and prints and costs about an additional $40

Or if $40 is breaking the bank for you, Cakewalk Music Creator is also capable of sequencing and scoring music for about $30 from Amazon.
